Turmeric Chicken Salad Recipe


In the cold and dreary months of winter, we all love to eat foods that are going to warm us up, body and soul. Soups, stews, and big pots of chili are all the rage during these drab, wintry days. Just like all of you, I love a big pot of chicken noodle soup or chili on these cold days, but every now and then I crave something fresh and delicious. I crave the freshness of vegetables that let me know Spring is just around the corner! That's the case with this recipe, Turmeric Chicken Salad!

If you've never tried turmeric, do not be afraid! Turmeric is a warm, peppery, vibrant herb, and it is absolutely delicious on chicken! One warning I have for you about this delectable herb is to wash your hands after rubbing it on chicken or anything else. It's rich yellow color, which gives ballpark mustard it's bright hue, will stain your hands. My mother learned that the hard way when she ate of piece of my Turmeric chicken with her fingers! =)

You can eat this chicken by itself or over top of a pile of fresh veggies. Either way, it simply scrumptious! 


Turmeric Chicken Salad

For the chicken:

2 chicken breast
1 tsp. Turmeric
1 Tbs. butter
1 Tbs. canola or vegetable oil
Salt and pepper

-Put your chicken breast between two pieces of plastic wrap and pound out until they're of equal thickness. This helps keep the cooking time even.
-Once the chicken is pounded out, rub the Turmeric, salt, and pepper onto both sides of the chicken. 
-Melt butter and oil together over a medium high skillet.
-Add your chicken and cook about 4 to 5 minutes on each side. (If you need to flip the chicken a few time, that's fine. I flip my chicken about four times, just to ensure that it's cooking properly and not burning.)
-Once done and beautifully golden, place the chicken breasts on a plate or cutting board and let them rest under a piece of aluminum foil for about 5 to 10 minutes. This allows the juices to go back into the chicken!

*You can stop here and eat your chicken with a few side dishes or on a sandwich, but I love it on a salad!

For the salad:

Iceberg lettuce
Baby Spinach
Diced cucumbers
Dices Roma tomatoes
Diced Mozzarella cheese

-Build a bed with your salad ingredients, using as much or as little as you'd like. 
-Dice up your Turmeric chicken and place some on top of your salad!
-Garnish with your favorite dressing or just add a little olive oil and vinegar.
