The Real Girl's Kitchen Chicken Soup Recipe


This recipe is by Haylie Duff and and you can find it in her cookbook, The Real Girl's Kitchen! This cookbook is full of healthy and delicious recipes that are easy to make! I've spent many hours diving into this cookbook and reading it like it was the next great Nicholas Spark's novel! Not only are there tons of recipes, but Haylie tells a story with each one that makes it fun and interesting to read about. I love when cookbooks have stories that go with the food. It makes it so much more fun!

The story behind this soup is that Haylie used to make it for her sister Hilary when she was sick, and it soon became one of their favorites. They call it "Sick Soup." The spicy kick you get from the jalapeno's is sure to clear up any stuffy-ness! Give it a try the next time you feel a little stuffy, or the next time you want to kick your chicken soup up a notch!


The Real Girl's Kitchen Chicken "Sick" Soup

8 cups chicken broth
2 cups water
1 cup orzo or brown rice
2 cups of chicken breasts, cooked and chopped
1 cup carrots, chopped
1 cup celery, chopped
1 onion, chopped
4 garlic cloves, peeled and chopped
1 jalapeno, diced (Add a few seeds for extra heat)
2 handfuls cilantro, chopped
Salt and Pepper
Red pepper flakes

-Bring chicken broth and water to a boil; add orzo.
-Add chicken and veggies; cook for a few minutes until veggies are tender and orzo is almost cooked, and then lower the heat.
-Add cilantro and simmer until orzo is completely cooked.
-Season with salt and pepper.
-Garnish with red pepper flakes for extra heat.

This recipe is so easy and fast! By using cooked chicken you cut the cooking time in half because you just have to cook the orzo and the veggies. You can omit the jalapeno if you'd like, but I wouldn't recommend it. If you want to cut the spiciness, I suggest you remove all of the seeds. The jalapeno gives it such great flavor, and I think you would miss it if it wasn't there. Also, if you don't eat it all the first day, the leftovers are even better the next!
