I heard about these babies from a neighbor of mine who's been on a low carb diet. So, not only are these peppers delicious, but they're Atkins/low carb diet friendly! Oh, and so easy to make!
Philly Cheesesteak Stuffed Peppers
1-2 lbs steak, cut into strips
1 large onion, sliced into strips
1 Tbs garlic
2 Tbs butter
1-2 Tbs A1 sauce (optional)

4 Large bell peppers
1 pkg sliced Provolone cheese
Salt and pepper

-Cut the tops off of peppers and scrape out seeds and ribs.
-Place one piece of cheese in the bottom of each pepper. Set aside.
-Brown meat in a pan with oil. When done set aside, keeping juices in pan.
-Add butter, onion, and garlic to pan and saute about ten to fifteen minutes, until soft. Season with salt and pepper.
-Add some A1 to onions to add a little flavor, and then add meat back to the pan. Cook another five minutes.
-Place peppers in a pan and stuff with meat mixture. Add another piece of cheese on top.
-Bake at 400 degrees for about 15-20 minutes. Until cheese is browned.
You can also just cut the peppers in half and stuff them that way. Instead of stuffing the whole pepper. Either way, it's delicious!
