Pumpkin Roll Recipe



Nothing says fall like the smell of pumpkin in the air, and what better way to get that glorious smell in your home than by baking a yummy pumpkin roll!!!!

Cake:

1 cup sugar
1 tsp. Salt
1/2 tsp. Cinnamon
2/3 cup mashed pumpkin
3/4 cup flour
1 tsp. Baking soda
3 eggs
1/2 cup chopped walnuts (optional)

Filling:

8oz cream cheese, softened
1 tsp. Vanilla
1 Tbs. Butter, melted
1 cup powdered sugar

-Preheat oven to 350. Grease a 15x10" jelly roll pan, and then line it with wax paper.
-Mix all the cake ingredients (except nuts) together until combined. Pour into prepared pan and sprinkle with nuts if you desire. 

-Bake 14 - 15 minutes.
-Lay a large dish towel on the counter and sprinkle with powdered sugar. Once cake is done baking, flip out onto towel. 

-Sprinkle some powdered sugar on top of cake and spread around. 
-Roll up cake into towel and let cool.
-While cake cools, make filling.
-Mix filling ingredients together until light and creamy.
-Once cake is cool, unroll and spread on filling. Then roll back up without the towel and refrigerate at least an hour.
