Spicy Pork Chop Packets Recipe


This is a spicy pork chop recipe that I got from a book called One Pot Meals from the Gooseberry Patch collection. I love this book! It's full of one pot meals for the oven, stove top, slow cooker, grill, etc. It's awesome! They also have cute little hints at the bottom of each page (Anything from decorating to recipes). You guys have to get this book! Here's the recipe!


Spicy Pork Packets

4 boneless pork chops
2 c. instant white rice
2 c. water
1 yellow bell pepper, sliced
1/2 onion, sliced
1/2 Tbs. EACH of ground cumin, ground coriander, and chilli powder (or a packet of Taco seasoning.)
1/8 tsp. EACH of salt, pepper, and cayenne pepper

-Mix together cumin, coriander, and chilli powder (If you're using taco seasoning just skip this step.
-Pour rice into a microwavable bowl, add water, salt, pepper, cayenne,  and 1 Tbs. taco seasoning. Microwave as directed.
-Rub remaining taco seasoning onto pork chops.
-Place pork chops onto individual aluminum foil squares (1 chop to a piece of foil.) . Top with rice, yellow pepper, and onion. Seal packet and then cut an X in the top to vent.
-Bake at 400 degrees for 45 minutes.

These are a little spicy, but you can add as little or as much spice as you want. I love these pork chops, and they're so easy to put together!
